Super Ugly Fudgy & Healthy Avacado Cookies. Gluten Free, sugar free!

Hey Guys. How was your weekend? Baking anything?

I'm having a chocolate dream recently.
Eating chocolate, dreaming chocolate. 

I just brought a slab of dark chocolate and been very delightful because chocolate is so mysterious to me.
(Seriously)
I won't go home single handed if I were to step in a baking store.
I know myself too well. Every single stuff there amaze me and I wish like I could just grab every single item back home. 


If I could. 
You know.

Anyway back here.





"Let me give you a warning first''

This cookies taste the best after refrigeration. 
I don't know why, but it does.

I added honey instead of coconut sugar. 
The results might be slightly different with sugar.
These are quite gooey and sticky.



It's really chocolatey. 
As in CHOCOLATEY.
C-H-O-C-O-L-A-T-E-Y



It's super rich and dark. 
With bitterness and some sweetness from the honey. 

It's like eating dark chocolate-brownie-cookie-fudge.
Whatever you can think of.
The best thing is,

It's gluten free, dairy free, sugar free!
OH YES!


Don't let this ugly babies intimidate you.




Super Ugly Fudgy & Healthy Avacado Cookies
Makes 10 big cookies


Ingredients:

100grams avacado flesh (About half of a big avacado) Smashed it up abit, leaving some bits is fine.
1/2 cup - 100grams coconut sugar or 1/3 cup - 113grams honey 
1 egg
1/2 cup - 55grams unsweetened cocoa powder
2 oz - 50grams dark chocolate chunks (above 64% cocoa please)
1 tablespoon water
1/2 teaspoon baking soda


Method:

Preheat your oven to 350F/180C
Using a hand mixer , mix together avacado and sugar until smooth. (In a medium bowl of course)
Add in the egg.
Mix in baking soda, water, cocoa powder and chocolate chunks.
Mix well. 
Drop 1 1/2 tablespoon of cookie dough in a baking tray lined with parchment paper. 
Bake for 12 to 15 minutes. Or until they don't really stick to the parchment paper.
But they will still be gooey.
Remove from oven and let cool before storing in fridge.


NOTES!
These cookies that I replaced with honey is slightly different in replacement of sugar. If you replace with sugar, these cookies might not be so gooey.
These cookies taste best after refrigeration. Trust me.

Oven Baked Sweet Potato Fries

If you really want to submit your photos to websites like Foodgawker or Tastespotting , get ready to be rejected unless your photos are really outstanding.


They will tell you either the position is awkward, lighting problem or many other reasons you can think of.


(I got rejected alot of times.)

Alright, back to the subject. 

This oven baked sweet potato fried is addictive. You need to eat it while it's still hot.
It's like fries. But these are healthy fries.

I think I cut the sweet potatos too thinly that some turn out burn. Like black.

But hey, it's still nice.

We finished it all up in one day. I can't stop reaching my hand out for it.
And it's so simple to make. Nice snack to munch on.


Ingredients:

2 Large sweet potato, slice
2 tbsp olive oil 
1 1/2 tsp cinnamon 

Method:

Preheat oven to 205 degrees celcius.
Wash sweet potato and cut into slices.
Dry the sweet potatos dry and place it in a bowl. 
(You have to dry it if not your sweet potatos will become soggy instead of crispy)
Drizzle olive oil and toss them thoroughly. 
Sprinkle cinnamon and toss again. 
Bake in oven for 20 - 25 minutes, turning and flipping every 10 minutes.

Chocolate Peanut butter lover's Granola.

I love nuts. 

I have this crazy obsession over them. I don't know why. I just do.

I can have it anytime. Peanuts, almonds, whatever.

This is a easy recipe. You can enjoy it as a very healthy snack because it uses honey to sweeten it.

And it's a combination of peanut butterrrr and chocolate. 
(It's so delicious and crunchy)

I want to grab some and munch right now.


Amazing? Yes I know. 

Keep the whole box for yourself and don't let anyone touch it.

Her blog is fantastic. 


Chocolate Peanut Butter Lover's Granola


Ingredients:

3 cups (240grams) old-fashioned rolled oats
3/4 cup (106grams) peanut (or any nut)
3 tbsp (25grams) unsweetend cocoa powder
1/2 cup (125grams) creamy or crunchy peanut butter
1/3 cup (113grams) Honey*
1/4 cup (60ml) coconut oil*
1 tsp vanilla extract

Optional: 

1/2 cup (90grams) chocolate chips
melted peanut butter

Directions:

Preheat the oven to 160C. Line a large cookie sheet with parchment paper. Set aside.
Mix oats, nuts and cocoa powder together in a large bowl.
Melt peanut butter, honey and coconut oil together in a medium bowl and stir until smooth.
Mix in the vanilla extract.
Pour over oats and mix untill all oats are moistened.

Bake for 30 minutes, stirring and flipping every 10 minutes.
Remove from oven and if adding chocolate chips, sprinkle the granola with them while it's still warm. Stir.
The chocolate chips will melt, creating larger cluster of granola.
Allow to cool at room temperature for at least 30 minutes. 
The air will help granola get crunchy. Store covered at room temperature for up to three weeks.
Serve with a drizzle of melted peanut butter if desired.

*For a vegan version, make sure you use maple syrup or agave instead of honey as well as dairy-free chocolate chips.
*For a gluten free version, make sure you use certified gluten free oats.
*Instead of coconut oil, feel free to use canola or vegetable oil

Homemade Apple Sauce (Unsweetened)

Some days I like sweet stuff. 

Some days I just want to avoid those sweet stuff and eat something savoury. 

Weird taste bud. Wait. 

Who doesn't have this kind of feeling? Ohh... Maybe I'm the only one. 

Found this homemade unsweetened apple sauce online because of my 100 Calories Chocolate Fudge Banana Muffin 

This is soo easy to make. And the best part is, you can use it as a sauce, for baking, for spreading on your bread. Or you can just lick it off the spoon. Just like that. Yums.

The natural sweetness from apple prevented me from adding more sugar. It's already sweettt enough. 


Ok. Nuff said. 

Why not you just try and tell me how it taste like??


Homemade Unsweetened Apple Sauce.

Ingredients:

4 apples, peeled, cored and chopped (I chopped like wedges)
3/4 – 1 cup water
1 tbsp lemon juice
1 tsp ground cinnamon, optional
1/2 tsp vanilla essence, optional
Directions:
Place 3/4 cup water in a pot and bring to a boil before adding in all the other ingredients, and cover with a lid.
This should be allowed to simmer for about 5-10 minutes, or until the apples are tender.
Depending on what you are using this for you can either mash it all together with a fork and let cool before serving it.
If using this in a recipe or as a sauce, blend it using a hand blender (or standard blender) after it is cooked.
Add the remaining 1/4 cup water if necessary to get the smooth creamy consistency.


100 Calories Chocolate Fudge Banana Muffins.

100 Calories?? Are you kidding me?

How can that be? You must be lying. 

I am serious. This is one healthy muffin for you to sink your teeth in. 


So... Let's indulge, guilt free.

So Yummy. It taste like brownie-muffin. Great for breakfast.




Look closer. And, take a bite.



100 Calories Chocolate fudge Banana Muffins
Makes 10

Ingredients:


1 egg
50grams brown sugar
1/3 cup applesauce (I used unsweetened) 
1 teaspoon vanilla extract
3 Bananas (Mashed)
1 cup oat flour (90grams) (or substitute all-purpose flour)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
30grams cocoa powder 
Chocolate chips (optional)


Method:

Preheat oven to 180C. Grease muffin tin.
Whisk together the egg, sugar, applesauce, vanilla, and bananas.
Mix the dry ingredients and add to the wet.
Mix just until combined.
Add some chocolate chips if you want. (I did)
Bake for about 20-25 minutes. (I just cooked them until a toothpick came out just a little sticky because I wanted them to be "brownie-ish").
I also drizzled them with melted chocolate.


I broke the rules and took a bite.
